Black-Eyed Peas
- 1 cupdried black-eyed peas (lobia / alasandalu), soaked overnight
- 2½ cupswater

Curry Base
- 1 tablespoonoil or ghee
- 1 teaspooncumin (jeera) seeds

- Black-eyed peas are known by many names — lobia, alasandalu, cow peas, or black-eyed beans. Any variety works well for this recipe.

Add the dried black-eyed peas to a bowl and soak them in plenty of water for at least 8 hours or overnight.

Drain the soaking water and rinse the black-eyed peas well with fresh water.

Turn the Instant Pot to Sauté mode. Add oil or ghee.

Add cumin seeds and allow them to splutter.

Add the chopped onions and sauté until they become soft and translucent.

Add the tomatoes and cook until they soften and become slightly mushy.

Add turmeric powder, coriander powder, red chili powder, garam masala (if using), and salt. Mix well.

Add the soaked black-eyed peas and stir everything together.

Add water and mix well.

Close the lid, set the valve to Sealing, and cook on Pressure Cook (High) for 6 minutes.

Allow the pressure to release naturally for about 10 minutes, then carefully release any remaining pressure.

Open the lid and stir well. If desired, lightly mash a few black-eyed peas with the back of a ladle to create a thicker, creamier curry.
