Millet & Dal Base

  • 1 cupKodo millet (pearled or unpearled, not parboiled)
  • 1 cuptoor dal
  • 5–6 cupswater (adjust based on desired consistency)
  • to tasteSalt

Vegetables

  • Choose about 3 cups of vegetables:
  • 1medium carrot, diced
  • 1 cupsquash, diced
  • ½ cupfrozen peas

Optional additions:

  • 1 cupbottle gourd, diced
  • 1 cupash gourd, diced
  • 1drumstick, cut into pieces
  • ½ cuppotato, diced
  • ½ cupeggplant, sliced
  • ½ cupgreen beans, chopped

Seasoning & Masala

  • 1 teaspoonturmeric powder
  • 2–3 tablespoonsbisibelebath masala
  • ½ teaspoongaram masala
  • 1–2 teaspoonsred chili powder (optional, depending on spice level)
  • 1 teaspooncoriander powder
  • to tasteSalt

Tempering

  • 1 tablespoonghee or oil
  • 1 teaspoonmustard seeds
  • 1 teaspooncumin (jeera) seeds
  • 1 tablespoonchana dal
  • 1 tablespoonurad dal
  • 8–10curry leaves

Notes & Tips

    • The most important step with kodo millet is washing it thoroughly and soaking it. Unlike rice, millet can retain more natural starch and a slightly earthy flavor if not prepared properly.
    • Even after multiple washes, the water may still look cloudy — this is completely normal for kodo millet.
    • Bisibelebath should not be dry. The ideal consistency is soft, creamy, and slightly loose because the millet and dal continue absorbing liquid as they sit.
    • For an extra special version, roast the cashews in ghee and add them right before serving for a rich, nutty finish.

Method

    Prepare the Kodo Millet

    Add the kodo millet to a bowl and wash it multiple times with fresh water.

  3. 03

    Continue rinsing until most of the excess starch is removed.

    Do not worry if the water still looks slightly murky — that is the natural nature of kodo millet and is normal.

    Soak the washed millet in plenty of water for at least 8 hours.

    After soaking, drain and discard the soaking water.

    Cook the Bisibelebath

    Wash the toor dal well and drain.

    Add the soaked kodo millet, washed toor dal, vegetables, turmeric, salt, and water to the Instant Pot.

    Mix well and close the lid.

    Pressure Cook on High for 6 minutes.

    Allow the pressure to release naturally for about 10 minutes, then release any remaining pressure.

    Open the lid and mash the mixture slightly. Bisi Bele Bath should have a soft, porridge-like consistency.

    Add Bisi Bele Bath masala, garam masala (if using), and adjust the consistency with hot water if needed.

    Prepare the Tempering

    Heat ghee or oil in a small pan.

    Add mustard seeds and allow them to splutter.

    Add cumin seeds, chana dal, urad dal, curry leaves, and hing.

    Let everything become fragrant and lightly golden.

    Pour the tempering over the millet mixture and mix well.

    Let the Bisi Bele Bath simmer on Sauté (Low) for a few minutes so the flavors combine.

    Top with ghee-roasted cashews and fresh cilantro.
