Vegetables
- —Use about 2–3 cups mixed vegetables, cubed:
Suggested combination:
- ½ cupbottle gourd, cubed
- ½ cuppumpkin, cubed
- ½ cupdosakaya, cubed
- ½ cupokra, chopped
Pulusu Base
- 2 tablespoonsoil
- ½ teaspoonmustard seeds
- 1 teaspooncumin seeds
- 1 teaspoonurad dal
- ¼ teaspoonhing
- 5–6curry leaves
- 1½ teaspoonsthick tamarind paste
- 1 tablespoonjaggery powder
- 1–1½ teaspoonsred chili powder
- to tasteSalt
- 2–3 cupswater
Thickener
- 2 teaspoonsrice flour
- 2–3 tablespoonswater
Step by step
Method

Heat oil in a pot.

Add mustard seeds and allow them to splutter.

Add cumin seeds, urad dal, hing, and curry leaves.

Add the mixed vegetables and sauté lightly.

Add water, tamarind paste, salt, and red chili powder.

Cook until the vegetables are tender.

Add jaggery and mix well.

Mix rice flour with water to create a smooth slurry.

Add the rice flour slurry slowly while stirring.

Simmer for another 2–3 minutes until the pulusu thickens and a light film forms on top.

Remove from heat and serve.
