  • 1small onion, cubed
  • 4-5green chilies, slit vertically

Notes & Tips

    • Sorakaya Pulusu Kura is a classic Telugu-style tangy curry where the mild bottle gourd absorbs the flavors of tamarind, jaggery, and spices. It is different form “pulusu” because it’s not as runny in consistency.
    • The balance between tamarind and bellam is important — the jaggery does not make the dish sweet but helps round out the sourness from the tamarind.
    • Rice flour is used as a traditional thickener. Add slightly more or less depending on how thick you prefer your pulusu.
    • Fresh sorakaya is very important for this recipe. Avoid using bottle gourd that tastes bitter.
    • This curry pairs especially well with green moong pongal because the tangy pulusu balances the mild, comforting flavor of the pongal.

Step by step

Method

    Prepare the sorakaya by peeling and cubing it. Check that it is fresh before cooking — the skin should be easy to pierce with your fingernail, or you can taste a tiny piece. It should taste mild or slightly sweet, not bitter.

    Heat oil in a saucepan. Add mustard seeds and allow them to splutter. Add cumin seeds, urad dal, hing, and optional chana dal. Roast until the dals become lightly golden.

    Add the slit green chilie. Sauté briefly until fragrant.

    Add the onion and sauté for 3-4 minutes. Then add the sorakaya pieces and sauté gently for a few minutes. Add a splash of water if needed to prevent sticking or burning.

    Once the sorakaya begins to soften, add about 1-2 cups of water, salt, tamarind paste, jaggery, and turmeric. Mix well.

    Cover with a lid and allow the curry to simmer for about 10 minutes until the sorakaya is cooked through and the flavors come together.

    Mix the rice flour with a little water to create a smooth slurry. Add it to the curry and stir well. The rice flour helps thicken the pulusu and bring the flavors together.

    Cook for another 5 minutes until the curry reaches your preferred consistency.

    Turn off the heat and serve hot with green moong pongal, rice, or a dollop of ghee.
