Ingredients
- 8-12fresh okra (bhindi), washed and completely dried
- 1-2 tablespoonsoil (for cooking)
- 3 tablespoonsKura Podi (Telugu seasoning powder)

- ½ teaspoonred chili powder (adjust based on spice preference)

Notes & Tips
- Kura podi is not curry powder. Curry powder is a Western spice blend and is not a traditional ingredient in Indian cooking. Kura podi is a Telugu-style seasoning powder made with roasted lentils, cumin, coriander, and dried red chilies.
- If you do not have Kura podi, chutney podi works beautifully as a substitute. A simple peanut chutney podi made with roasted peanuts, dried red chilies, and salt is enough to create a flavorful stuffing.
- Since the okra is stuffed raw and the vegetable itself is not seasoned separately, the stuffing should taste slightly stronger before cooking.
- Keeping the okra dry before cutting is one of the most important steps for avoiding sliminess.
- Some people prefer keeping the okra stem attached because it looks beautiful when plated, but removing it makes the dish much easier to eat.
- Cooking time depends on the freshness and size of the okra. Fresh, tender okra cooks much faster than larger or older okra.

Wash the okra thoroughly and pat completely dry using a kitchen towel. Drying the okra is very important to prevent a slimy, stringy texture while cooking.

Prepare the stuffing by mixing the Kura Podi (or chutney podi) with additional red chili powder, coriander powder, and salt. Since the raw okra itself is not seasoned, adding a little extra seasoning helps balance the final flavor.

Cut a slit lengthwise into each okra. You can remove a few seeds from the center to create more space for the stuffing.

Gently open each slit so there is room for the stuffing.

Stuff each okra generously with the prepared podi mixture.
To air fry

Arrange the stuffed okra in the air fryer basket and drizzle lightly with oil.

Air fry at 350°F for 8 minutes.

Flip or shake the basket, drizzle a little more oil if needed, and air fry again at 350°F for another 8 minutes until tender and lightly roasted.
To cook on the stovetop

Heat a pan and drizzle with oil.

Add the stuffed okra and cook uncovered on medium heat for 8-10 minutes. Cover with a lid for another 2-3 minutes, then finish uncovered until tender.

Pan-cook until the stuffing is toasted and the okra is tender. - 11
Serve warm with rice, dal, or yogurt rice.
