Ingredients

  • 1medium broccoli crown, cut into florets
  • 2medium carrots, chopped into small pieces
  • 1large potato (or 2 small potatoes), peeled and chopped into small pieces
  • 2 cupsoat milk
  • Dairy milk can be used as a substitute
  • ½ cupwater (plus more if needed)
  • 2 teaspoonsoil or butter
  • 2 clovesgarlic, finely chopped
  • ½small jalapeño, finely chopped
  • ½ teaspoonblack pepper
  • to tasteSalt

Optional Additions

  • ¼ cupcheddar cheese (for a richer, creamier soup)

Notes & Tips

    • Cutting the potatoes and carrots into smaller pieces helps them cook faster and creates a smoother soup texture.
    • Oat milk adds a naturally creamy texture while keeping the soup lighter. Dairy milk works well too if preferred.
    • The jalapeño adds a gentle warmth, but you can skip it completely for a milder soup.
    • For an extra indulgent version, add a little cheddar cheese at the end. It gives the soup a classic broccoli-cheddar flavor while still keeping the base simple.
    • This soup stores well in the refrigerator for a few days. Reheat gently on the stovetop and add a splash of milk or water if it thickens too much.

Step by step

Method

  1. 01

Heat oil or butter in a saucepan over low-medium heat.

  2. 02

Add finely chopped garlic and jalapeño. Sauté for about 30 seconds to 1 minute until fragrant. Be careful not to burn the garlic.

  3. 03

Add chopped potatoes and carrots. Add salt and mix well.

  4. 04

Sprinkle a little water, cover with a lid, and cook for 6–7 minutes until the vegetables begin to soften.

  5. 05

Add the remaining water and broccoli florets.

  6. 06

Cover and cook for another 4–5 minutes until the broccoli softens slightly and loses its bright green color.

  7. 07

Turn off the heat and allow the mixture to cool slightly.

  8. 08

Using an immersion blender, blend the soup until smooth and creamy.

  9. 09

Alternative: Transfer carefully to a blender and blend in batches.

  10. 10

Return the blended soup to the pan.

  11. 11

Add oat milk and simmer on low heat for 2–3 minutes.

  12. 12

Add black pepper and adjust salt and spice according to taste.

  13. 13

If using cheddar cheese, stir it in at this stage and allow it to melt completely.

  14. 14

Serve warm with croutons or toasted bread.

  15. 15

This Creamy Broccoli Soup is a comforting, nourishing soup that gets its creamy texture naturally from potatoes and oat milk — no heavy cream needed!

  16. 16

It makes a cozy meal on its own or pairs beautifully with toasted bread, sandwiches, or a simple salad.
